This is a satin sheen, the low-gloss option that reflects less light than semi-gloss or gloss and hides surface irregularities and traffic marks better. Sheen is a property of the coating itself, so a satin film gives the same protection as a glossier one while reading flatter on the surface.

Polyurethane is applied over bare, stained or sealed wood in multiple thin coats, with a light sanding between coats to level the film and give the next one something to bite. Confirm recoat times, thinning and cleanup with the manufacturer's label before starting, as these differ between oil-based and water-based formulas.
